Apple Khajurii.

Ingredients to make Apple Khajurii.

  • For Apple jam. 4 apples peeled and grated
  • 3 tbsp ghee or melted butter
  • 1 tsp cinnamon powder
  • 1 tsp dry ginger powder
  • 1 cup grated jaggery or a bit more as per taste
  • 2 tbsp water
  • For the Dough 4tbsp semolina 250 gms plain flour
  • ĵ tsp baking soda
  • 3 tbsp ghee or melted butter
  • A pinch of salt.
  • Milk as needed to bind the dough
  • 4 tbsp sesame seeds.
  • 1tbsp powdered sugar mixed with1tsp cinnamon pwdr fr dusting
  • Oil for deep frying

How to make Apple Khajurii.

  1. Take a pan add jaggery and 2 tbsp water, put on medium flame and melt the jaggery stirring continuously to avoid burning.Cook for a few minutes and switch off the flame,strain and keep aside.
  2. Heat 3 tbsp ghee in an iron or nonstick pan and sauté the grated apples till soft.Add in the cinnamon powder n the dry ginger powder and cook for a few minutes.Then pour in the strained jaggery n cook on low flame till jam like consistency
  3. In a bowl, add plain flour, semolina, baking soda , pinch of salt ,mix it well and then add the prepared apple jam, ghee or butter and make it in to a hard dough.You may sprinkle milk in between to knead the dough.Cover and rest the dough.
  4. Divide the dough into 2 or 3 parts. On a working surface sprinkle sesame seeds and roll the dough over it so the seeds may stick to it, pat with your palm.
  5. Dust the flour on the working surface and roll the dough with a rolling pin into 1/4 inch. Cut it into large diamonds shape.
  6. Heat oil in a wok In a pan, make it medium hot and deep fry the khajuris till light golden brown.With the help of slotting spoon drain the khajuris on absorbent paper.
  7. Dust with sugar,cinnamon powder. When completely cool store in tight lid container. You may serve it warm.

My Tip:

Fry on medium flame or else it will burn n have a bitter taste. You may add brown sugar or normal white sugar instead of jaggery. this khajurii is very soft from inside. While adding sweetness to apples let it be a bit more sweet, cause when uu add flour to it the sweetness adjusts accordingly. And always fry in medium hot oil or else the khajuri tends to break. You may add 1 beaten egg while binding the dough if uu like.
