ABOUT TEEVAN ( Sindhi Mutton Curry ) RECIPE

This is Sindhi style mutton curry cooked with daag (brown onion gravy). We call it radhala teevan.

Ingredients Serving: 3

  1. Mutton .... 250 gms
  2. Onions .... 3 medium sized (sliced)
  3. Tomatoes... 1 (chopped)
  4. Ginger paste ... 1 tsp
  5. Garlic paste .... 1 tsp
  6. Green chillies ... 1-2 (chopped)
  7. Coriander powder .. 1 tsp
  8. Cumin powder ........ 1 tsp
  9. Cumin powder ........ 1 tsp
  10. Garam Masala ......... 1/2 tsp
  11. Red chilli powder ... 1/2 tsp ( according to your taste )
  12. Green cardamoms .... 2-3
  13. Salt ...... to taste
  14. Oil ... 8 tbsps
  15. Coriander leaves .. handful

Instructions

  1. Clean the mutton and set aside.
  2. Heat oil and fry the onion for a few minutes.
  3. Add the tomatoes, ginger-garlic paste, green chillies and a little water and simmer it to cook. Grind it with a hand grinder or in a mixer.
  4. Now add the mutton and saute it. Keep adding a little water in between and continue to saute ( Bhuno) until you get a nice brown colour.
  5. Now add the salt and dry spice powders. Crush the cardamoms and put them along with the skin. Also add a little chopped coriander leaves.
  6. Pour sufficient water for the gravy and simmer it until done.
  7. Keep the consistency of gravy as per your liking and add water accordingly while cooking.
