Totakura Pulusu- Amaranth Leaves Tangy Curry

Ingredients to make Totakura Pulusu- Amaranth Leaves Tangy Curry

  • Totakura (amaranth leaves)- 2 cups finely chopped
  • tomato- 4 medium sized finely chopped
  • onion- 1 medium sized finely chopped
  • green chillies- 2 cut in halves
  • salt to taste
  • turmeric powder- 1/4 tsp
  • red chilli powder- 1/2 tsp
  • tamarind- 1 inch piece
  • oil- 1 tbsp
  • mustard seeds- 1/2 tsp
  • Split urad dal- 1 tsp
  • cumin seeds- 1/2 tsp
  • garlic cloves- 4, crushed
  • Few curry leaves

How to make Totakura Pulusu- Amaranth Leaves Tangy Curry

  1. Take all the chopped vegetables in a pan and add salt to taste, tamarind piece, turmeric powder, red chilli powder. Pour in 1/4 cup of water and cook in a very low flame till the vegetables are cooked and all the water is evaporated.
  2. To check if the amaranth leaves are cooked or not take out a spoon of curry, let it cool for a minute and mash the leaves with your hands, if the leaves are mashed then it is cooked.
  3. Now remove from heat and mash the cooked vegetables with a potato masher (pappugutti) to mix every thing well as this gives a smooth texture to the curry.
  4. Don't over mash, just mash it till every thing blends well.
  5. Now heat oil in another pan, add mustard seeds and let them pop, then add the crushed garlic, urad dal, cumin seeds, curry leaves one by one and fry till they turn golden. Add this seasoning to the mashed Amaranth leaves mixture and stir well.
  6. Serve it with rice.
