Ingredients to make Pyaaj ki kachori

  • For the coating:-
  • Wheat flour-1/2 cup
  • Maida-1/2 cup
  • Ghee-1/4 cup
  • Salt-1 tsp
  • Carom seeds-1 sp
  • For the filling:-
  • Onions-4
  • Green Chillies-2
  • Ginger-1 inch
  • Cumin Seeds-1 tsp
  • Fennel seeds-1 tsp
  • Asafoetida-1 pinch
  • Salt
  • Turmeric-1/2 tsp
  • Chilli powder-1 tsp
  • Coriander powder-2 tsp
  • Cumin Powder-1 tsp
  • Aamchoor-1 tsp
  • Garam masala-1 tsp
  • Gram flour-1 tbsp
  • Coriander-2 tbsp
  • Oil for frying
  • For serving:-
  • green chutney
  • Sweet tamarind and dates chutney

How to make Pyaaj ki kachori

  1. Take ingredients for the outer covering in a bowl and knead a semisoft dough.
  2. Now take a pan and heat a tbsp of oil .Add cumin seeds,fennel seeds and asafoetida.
  3. When these splutter,add ginger and green chilli paste.Saute for 30 seconds.
  4. Now add finely chopped onions.
  5. Cook for 3 to 4 minutes till they brown slightly.
  6. Now add all dry spices written in filling part.
  7. Mix properly and then add besan and chopped coriander leaves.
  8. Mix and cook for 2 minutes.The besan will absorb moisture and make the filling thick.Now our filling is ready.
  9. Now take a small ball from the dough and roll into small Puri.Put a tbsp of filling on this.
  10. Now pick up from sides and take pleats.Seal the dough.
  11. Press lightly with fingers to form a flat kachori.
  12. Prepare all kachoris simlarly.
  13. Now take a pan with oil for frying.When oil becomes hot slowly slide the kachori into the oil and fry at medium to slow flame .
  14. Fry all kachoris similarly and serve with sweet chutney and green chutney.

My Tip:

Fry the kachoris on slow to medium flame to get crispy kachoris. You can bake these kachoris for healthy version.
