ABOUT Boondi Laddu RECIPE

In Andhra Pradesh without Boondi laddu no marriage function is complete. Also for special occasions Boondi laddu is a must in the sweet list. When I was a kid, our cook made these delicious laddus for special occasions. She use to arrange a firewood stove in the open air in our backyard and make hundreds of laddus for our family. Those fresh hot laddus tasted like heaven with their camphor flavor.

Ingredients Serving: 10

  1. Gram flour (besan)- 2 cups
  2. Water- 1 cup
  3. Cardamom powder- 1/2 tsp or cooking camphor a pin
  4. Ghee- 2 tbsp
  5. Cashew nuts- 1/4 cup broken into half
  6. Raisins- 1/4 cup
  7. Baking soda- 1/2 tsp
  8. Oil for deep frying
  9. For the syrup:
  10. Sugar- 2 cups
  11. Water- 1 cup

Instructions

  1. To prepare the sugar syrup, take the sugar in a thick bottomed pan, pour in 1 cup of water and boil it in a medium heat just till you get one string consistency. To make the boondis, sift the flour into a mixing bowl, add 1 cup of water and make a batter. (This batter should be like that of dosa batter consistency.)
  2. Heat oil in a deep frying pan, first heat the oil in a high heat for 5 minutes then reduce the heat to medium. (When you drop batter in the oil, it should come up immediately. So it's important to keep the heat on medium to get the perfect bubbles of boondi.)
  3. Hold a skimming ladle (one with holes) above the hot oil and pour a soup ladle full of batter so that the batter will drop into the hot oil through the holes. Within a few seconds you can see the boondi coming up in the hot oil.
  4. Fry these boondis for 7 to 8 seconds, then remove from oil and place them on a paper towel. Transfer these fried boondis into the sugar syrup and make the next batch of boondis. Follow this process till you finish the batter and add all the boondis into the sugar syrup.
  5. Heat ghee in a pan, fry the cashewnuts and raisins till they turn golden, then add them to the sugar and boondi mixture. Add cardamom powder or cooking camphor, mix well and cover it for 30 mins.
  6. To prepare the laddus, apply some ghee to your hands, take some boondi mixture and hold them real tight to make ball shapes.
  7. Serve them warm for best taste.
