ABOUT ONION BHAJIS | PAKODAS RECIPE

Bhaji (deep fried fritters) is a very popular snack in India, often associated with monsoon/rains and goes well with a piping hot cup of coffee or tea

Ingredients Serving: 3

  1. Onions – 2 large, finely sliced
  2. Ginger – Minced, 1 teaspoon
  3. Green chili – 1 chopped
  4. Turmeric powder – ½ teaspoon
  5. Asafoetida – a good pinch
  6. Curry leaves – 1 sprig, chopped
  7. Gram flour – ½ cup
  8. A pinch of baking soda
  9. Salt to taste
  10. Vegetable oil for deep frying

Instructions

  1. In a large mixing bowl, put the sliced onions, curry leaves, coriander leaves and mix gently with your hands. Now add all the other ingredients and mix well.
  2. Add water very little at a time and mix till everything comes together and well coated. Set aside for 10 minutes.
  3. Heat oil in deep frying pan over medium heat. Once heated though, take about a tablespoon of the onion mixture and carefully drop it into the hot oil.
  4. Fry till golden brown. Remove and drain on a paper/kitchen towel.
  5. Serve hot with your favorite chutney.
