Eggplant Onion Raita...

Ingredients to make Eggplant Onion Raita...

  • Eggplants big oval ones 2
  • Curd 200gms or 1 cup
  • Salt to taste
  • Cumin powder 1 tsp
  • Onions sliced and deep fried 1
  • Green chillies paste 1 tsp or 1 tbsp of these chopped finely

How to make Eggplant Onion Raita...

  1. Whisk the curd with salt and cumin powder.
  2. Set it aside after adding the chilli paste too.
  3. Deep fry the sliced onions and set aside.
  4. Roast the egg plant on gas directly and peel the skin off and cut into 1" thick round slices.
  5. OR
  6. Deep fry them in hot oil on high flame for 3 to 4 minutes until light golden in colour.
  7. Add these slices to the water with little salt added as you cut them for frying. This will prevent them from discolouring.
  8. I deep fried them for a lovely aromatic raita.
  9. Add the deep fried sliced onion and the eggplant slices to the curd.
  10. Mix well and serve right away.
  11. Things can be made well in advance for this raita and you just need to mix all when required. It really comes in handy.
