Ingredients to make Koshari...(Egyptian rice,lentils and macaroni one pot meal)

  • Chickpeas 1 cup soaked
  • Rice good quality 1 cup soaked
  • Whole masoor dal or brown lentils 1 cup
  • Macaroni 1 cup boiled
  • Spaghetti 1 cup boiled
  • Salt to taste
  • Vegetable stock 2 cups
  • Bay leaves 2
  • Cumin seeds 1 tsp
  • Garlic sliced thinly 2 cloves
  • Olive oil 1 tbsp
  • Onions large sliced thinly 2 deep fried
  • FOR THE SAUCE...
  • Olive oil 3 tbsp
  • Tomato paste 1 cup
  • Garlic mince 2 tbsp
  • Baharat spice blend 1 tbsp
  • Salt to taste
  • Red chilli flakes 1 tbsp
  • FOR THE BAHARAT SPICE BLEND...
  • Peppercorns 2 tbsp
  • coriander seeds 2 tbsp
  • cumin seeds 2 tbsp
  • Cinnamon sticks 6 to 7
  • Paprika 1 tbsp
  • Nutmeg 1 tsp

How to make Koshari...(Egyptian rice,lentils and macaroni one pot meal)

  1. First of all prepare the baharat spice blend by roasting all the spices on a low flame for a minute or two.
  2. Blend all and store it in an airtight jar.
  3. FOR THE RICE...
  4. In a saucepan add olive oil about a tbsp and throw in some cumin seeds.
  5. After a few seconds, add the bay leaves and stir in the soaked rice.
  6. Soak the rice for atleast 20 minutes.
  7. Next saute the sliced garlic.
  8. Stir in the rice now.
  9. Add 2 cups of vegetable stock and let it simmer until done.
  10. Adjust the salt accordingly.
  11. Pressure cook the chickpeas and set aside.
  12. Boil the whole masoor dal or brown lentils too until done.
  13. Boil the macaroni and the spaghetti according to the package instructions until al dente.
  14. FOR THE SAUCE....
  15. In a pan, heat 3 tbsp of olive oil.
  16. Add the garlic and the chilli flakes.
  17. Saute for a minute.
  18. Add the baharat spice blend about 1 tbsp.
  19. Next add the tomato paste.
  20. Let it simmer for 3 to 4 minutes.
  21. Add salt accordingly.
  22. Deep fry the sliced onions and set aside.
  23. ASSEMBLING THE KOSHARI....
  24. Mix the cooked rice, lentils, chickpeas and macaroni well with proper care.
  25. Pour the chilli garlic sauce on top.
  26. Garnish with crispy fried onions generously.
  27. Yummylicious one pot meal Koshari is ready to devour.

My Tip:

If vegetable stock is unavailable, one can even use maggi seasoning cubes about 2 adding it to the water with rice.
