ABOUT Ulli Theeyal (Soated Pearl onion cooked in roasted coconut Gravy) RECIPE

Ulli(Onion) Theeyal is a Kerala traditional dish which is made of roasted coconut, coriander powder/seeds and fenugreek.it has a very nice aroma of roasted coconut and little pungent from tamarind and yes off course bit of red chilly which adds spices to our curry

Ingredients Serving: 3

  1. Pearl Onion:- 500 gms ( sliced thinly ) Keep 5 to 6 whole onion for garnishing
  2. Cummin Seeds:- 1 tsp
  3. curry leaves:- 1 sprig
  4. Grated Coconut:- 1cup
  5. Coriander Powder:- 1 tbsp
  6. Chilli powder:- 1 tsp
  7. Kashmiri Chilly powder:- 2 tsp
  8. Turmeric Powder:- 1 tsp
  9. Tamarind:- 1 gooseberry size soaked in warm water
  10. Salt :- as per your taste
  11. coconut oil:- 2 tbsp
  12. Methi( Fenugreek seeds) roasted and powdered 1/2 tsp
  13. Jaggery:- optional( grated 1 tsp)

Instructions

  1. Heat pan and dry roast grated coconut until it turns dark brown in color
  2. Once it turns light brown in color add cumin seeds and roast for 2 mins, add coriander powder, chilly powders, turmeric powder and roast for 30 seconds.
  3. Remove from fire and allow it cool.
  4. Grind roasted masala first fry in mixer later add water little by little and grind to smooth paste.
  5. Heat oil in deep kadai add whole onion pieces first fry until it turns light brown in color.
  6. Remove from pan and set aside for garnishing. Now in the same pan add sliced onion and curry leaves fry until it turns brown .
  7. Add grounded masala mix well add little water and make gravy little thin
  8. Add tamarind juice give a nice mix and now add salt
  9. Allow it cook for 2-3 mins in medium flame now you can add grate jaggery and mix well
  10. Now you can add methi powder mix well, pour little coconut oil and now cover with lid. Switch of the flame of your stove
  11. Let this gravy set for 10 mins.
  12. Serve hot with steam rice
