Creamy Spring Onion Soup

Ingredients to make Creamy Spring Onion Soup

  • spring onion 1/2 bunch
  • potato 1 medium
  • butter/ Ghee 1 teaspoon
  • Tempering: cumin seeds and asafotida
  • garlic paste 1 teaspoon
  • corn kernels 1 tablespoon
  • cashewnuts and almonds 4-5 each
  • Dried basil 1/4 teaspoon
  • Thyme 1/4 teaspoon
  • Oregano 1/4 teaspoon
  • nutmeg powder 1 pinch
  • Maggie chicken cube 1 (optional)
  • Cheese 1 slice
  • salt to taste
  • Milk 1/2 cup

How to make Creamy Spring Onion Soup

  1. Finely cut greeens of spring onion and one potato
  2. Pour some water and boil.
  3. Cook till potatoes are soft
  4. After it cools down, make a puree of potato and spring oinions. Remeber, if you are using a grinder, then wait till it cools down else steam pressure may burst open the lid of grinder while grinding.
  5. In a soup pan, heat ghee and add cumin seeds, asafotida and garlic
  6. Saute well. Add chopped whites of spring onion and roughly chopped cashew and almonds
  7. Saute till onions start caramalising.
  8. Add corn kernels
  9. Add spring onion and potato puree
  10. Mix well and add cheese slice
  11. Mix well till cheese melts and mixes well in soup
  12. Add milk and mix
  13. Let the broth boil on simmer
  14. Add herbs, nutmeg powder and chicken cube. You may skip chicken cube also.
  15. Let the soup boil
  16. Add salt at the end. If you add it before, milk might curdle. Also adjust the quantity of salt as cheese and chicken cube have a lot of salt.

My Tip:

You may add other ingredients as per choice like mushrooms/ chicken etc.
