It gives right amount of crunch and is very delicious. Good way to have spinach

Ingredients Serving: 4

  1. 250 gms rice
  2. 250 gms spinach (chopped)
  3. 1/2 cup ghee
  4. 6 cloves of garlic ground well
  5. 1inch piece of ginger pounded
  6. 1 small onion
  7. 1/4 cup each almond cashew peanuts.ground coarsely
  8. Green chilli 1
  9. 1 tsp garam masala
  10. 200 gms paneer (crushed)
  11. 1 tbsp cornflour
  12. Salt to taste

Instructions

  1. Cook spinach in the pressure cooker for 10 minutes. Cool and make a coarse paste.
  2. Mash paneer, add flour and salt to it. Heat ghee in a pan. Use a sieve to pass the mashed paneer through it in order to form strings. Fry this in very hot ghee. Once it's brown take it out and drain on a tissue paper.
  3. In a heavy-bottom pan, add a bit of ghee and fry onions till light brown .Add ginger, garlic, chili paste and saute. Mix in the spinach paste and add garam masala to it. Saute until dry.
  4. Add all the nuts some raisins and add rice.Pour double amount of water and cook it on slow fire.
  5. Once the rice is cooked, lay it on a plate. Layer it with the spinach and mix well. Transfer to another bowl. Add the paneer strings and remaining nuts. Serve hot.

sounds nice :D can we instead fry the steamed rice along with the spinach mixture for 2-3 minutes?
