Onion Tomato Stuffed Angel Eggs

Ingredients to make Onion Tomato Stuffed Angel Eggs

  • Hard boiled Eggs – 4 nos.
  • Cumin seeds – ½ tsp
  • Onion – 2nos Medium
  • Tomato large – 2-3 no’s finely chopped
  • Curry leaves – 3-4 no’s
  • Garlic cloves – 3-4nos finely chopped
  • Ginger grated- 1tsp
  • Coriander leaves – 1/4th cup
  • Green chili – 1-2 nos
  • Red chili powder- 1tsp
  • Turmeric Powder– ½ tsp
  • Garam masala – 1tsp
  • salt as per taste
  • Oil – 1 tbsp+ 1tbsp
  • Water - 1-2 tbsp if required

How to make Onion Tomato Stuffed Angel Eggs

  1. Place the eggs in a saucepan of a cold water. Let them stand in the hot water for 14-15 minutes. Drain and put in a bowl filled with ice water.
  2. Cut into halves. Keep aside.
  3. Peel and finely chop onions. Finely Chop Tomatoes, garlic cloves, coriander leaves.
  4. Split the green chillies vertically.
  5. In a pan; add oil; heat it. Add cumin seeds; let it splutter.
  6. Add whole curry leaves. Fry them. Add chopped garlic and grated ginger. Let it cook till raw aroma goes off.
  7. Add onion. Cook till translucent.
  8. Add green chillies and Chopped tomatoes. Cook tomatoes until they become soft and mushy.
  9. Add turmeric powder, garam masala, chili powder, salt. Mix well. Add a tablespoon water if required.
  10. Add chopped coriander leaves. Cook for 2-3 minutes.
  11. Take a halve of the egg; add cooked onion tomato mixture. Repeat the procedure with remaining egg halves
  12. Take 1tbsp oil in a pan. heat it. Shallow fry stuffed egg halves carefully from the bottom and sides till brownish and little crisp.
  13. Serve with dal rice or chapatti as a main dish or side dish.

My Tip:

Egg yolk can be removed and mixed with onion tomato mixture or can be kept as it is.
