Ingredients Serving: 4

  1. Small brinjals 7 to 8 sliced
  2. Onions 3 sliced
  3. Tomatoes 4
  4. Thick curd 1 cup
  5. Green chillies 4 to 5(can use big chillies aswell)
  6. Turmeric [haldi] powder - 1/2 tsp
  7. Chilly powder - 1/2 tsp
  8. Coriander [dhaniya] powder - 1 tsp
  9. Cumin [jeera] powder -1/2 tsp
  10. Salt.to taste

Instructions

  1. First slice the brinjals and tawa fry them till they golden brown on both the sides.
  2. I have used almost minimal oil here
  3. If you wish , you can deep fry the brinjal slices as well
  4. Take oil in a kadai and add the sliced onions. Fry them till golden brown.
  5. Add gg paste and dry masalas & green chilles and fry.
  6. Add chopped tomatoes and let it cook till oil separates.
  7. Now add the thick beaten curd and cook for 5 mins.
  8. Add the brinjals and add little water and let them cook till semi dry
  9. Garnish with fresh dhania and fried onion birista
  10. Serve hot with chapaties or zeera rice
