Muthiya is a very famous dish from the gujarati cuisine. ..here I am sharing the recipe of onion bajra muthiya which is not a common recipe of muthiya....but its tasty.

Ingredients Serving: 4

  1. 3/4 cup finely chopped onions.
  2. 1 cup bajra flour.
  3. 1 tbsp garlic ginger paste.
  4. 1/2 tsp turmeric powder.
  5. 1 tsp chilli powder.
  6. 1 tbsp dhania jeera powder.
  7. Pinch of soda/ eno.
  8. Finely chopped fresh coriander leaves.
  9. Salt to taste.
  10. Tempering:
  11. 2 -3 tbsp oil.
  12. 1/2 tsp mustard seeds.
  13. 1/2 tsp jeera.
  14. 1 tsp white sesame seeds.
  15. Pinch of hing.
  16. Few curry leaves.
  17. Freshly chopped coriander leaves for garnishing.

Instructions

  1. In a deep bowl add the bajra flour, onions and all the dry spices.
  2. Along with salt, soda and 1 tsp Oil.
  3. Mix well and knead a dough. Make sure do not use much water.
  4. Onions will leave moisture so your dough may become loose after some time.
  5. Once the dough is ready, divide it in equal portions and roll it in between the greased fingers.
  6. Meanwhile in a deep vessel bring 1 cup water to boil.
  7. On a stand place all the rolls of muthiyas .
  8. Place the stand in the vessel once the water is heated.
  9. Cover with lid and let the muthiyas be steamed for around 10 to 12 minutes on a medium flame.
  10. After 12 minutes just check with the tooth pick whether the muthiyas are cooked. ( toothpick comes out clean)
  11. Now switch off the flame and allow the muthiyas to cool down.
  12. Once cooled , now cut them into small roundels.
  13. In a pan heat oil for add the mustard seeds, jeera, sesame seeds, curry leaves and hing. Now add the cut muthiyas.
  14. Stir on a medium flame till it turns crispy.
  15. Switch off the flame garnish with freshly chopped coriander leaves and serve it with green coriander chutney and tomato sauce.
