Being a Maharashtrian I am fond of adding " Bakar" to the vegetables. Bakar is made with grated Coconut, Dhania powder, Garam masala, Coriander leaves, Chilli powder, Turmeric, Sesame seeds roasted, Garlic chopped, Green chilli chopped and Garam masala. I have added Roasted Gram Flour to this mixture.

Aloo Brinjal Masaledaar. ( Steamed with Bakar)

Ingredients to make Aloo Brinjal Masaledaar. ( Steamed with Bakar)

  • Brinjal 250 grms
  • Potatoes 150 grms
  • Coconut powder 2 tbsp
  • Ground nuts ( roasted and coarse ground) 1 tbsp
  • gram flour 2 tbsp
  • coriander powder 1 tbsp
  • Chill powder 1 tsp
  • Coriander leaves finely chopped 1 tbsp
  • Garam masala 1 tsp
  • Turmeric 1 tsp
  • Sesame seeds roasted
  • Ajwain 3/4 tsp
  • Asafoetida a pinch
  • Salt to taste
  • Oil 2 tsp to add in Bakar.
  • Oil 1 tsp to add while roasting gram flour
  • Oil for seasoning 2 tsp

How to make Aloo Brinjal Masaledaar. ( Steamed with Bakar)

  1. First chop Brinjal in half and than in long stripes.
  2. Peel Potatoes and chop in long stripes.
  3. Now we will make Bakar
  4. Saute Gram flour with oil, let it cool.
  5. Mix Coconut grated, Dhania powder, Sesame seeds, Ground nuts, Chilli powder, Turmeric, Garam masala, Coriander leaves, Turmeric and salt.
  6. Add 2 tsp oil in Bakar. Mix well. Add roasted gram flour, adjust salt.
  7. Now mix Chopped Brinjals and Potatoes in it.
  8. Steam for 10 minutes r till cooked.
  9. Heat oil in a pan. Add oil, add asafoetida and Ajwain.
  10. After it splitters add steamed vegetables. Sprinkle little water to mix everything gently.
  11. Saute for 3 minutes. Serve hot with roti or daal Rice. .
