  • TOPPING:
  • 1/4 Cup Butter, melted
  • 1/2 cup brown sugar
  • 6-7 pineapple slices (fresh or tinned)
  • 10-12 cherries (fresh or tinned)
  • Cake Ingredients:
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 Cup Powdered Sugar
  • 1/3 cup butter, softened
  • 1/4 cup pineapple juice (the juice from the tin can be used in case you are using tinned pineapple slices)
  • 1/4 cup Milk
  • 2 Eggs
  • 1 teaspoon vanilla or butterscotch essence

  2. Preheat oven to 180 degrees C
  3. In a round cake pan put melted butter. Sprinkle brown sugar evenly over melted butter
  4. Take some pineapple slices and place them in and around the pan. Now place the cherries in the center of the pineapple slices
  5. In another bowl add, flour, baking powder, and salt
  6. Cream butter and sugar together until light and fluffy
  7. Add in milk, pineapple juice and vanilla essence. Then add the eggs, mix well
  8. Now slowly add the flour mixture
  9. Pour batter into prepared cake tin. Place into preheated oven and bake for 40-45 minutes. Insert a toothpick in the center of the cake. If it comes out clean the cake is done
  10. Remove the cake from oven and let cool on stove for about 10 minutes. Take a serving dish and turn the cake upside down
  11. Your cake is ready. Slice up and and enjoy!

My Tip:

Place a baking sheet under the cake tin because the juices from the cake tend to ooze out sometimes
