ABOUT Mutton Dhansak RECIPE

Mutton Dhansak is spicy mutton cooked in gravy of lentils and vegetables. Overall the mixture of all the taste with freshly ground masala brings out a mouth watering taste. There are various version to make dhansak, instead of mutton you can add chicken or fish or egg. Even simple lentils and vegetables with dhansak masala also taste great. You can serve this with brown rice or berry pulao.

Ingredients Serving: 4

  1. Toor dal 1 cup
  2. Moong dal 1/2 cup
  3. Masoor dal 1/2 cup
  4. Mutton 1/2 kg
  5. Brinjal 1
  6. Pumpkin 100 gm
  7. Tomato 2
  8. Potato 2 medium
  9. onion 1 medium
  10. Ghee 2 tablespoon
  11. Bay leaves 2
  12. Ginger Garlic Paste 3 teaspoon
  13. Turmeric powder 1 teaspoon
  14. Tamarind 1inch
  15. Jaggery 2 teaspoon
  16. Salt to taste
  17. For masala: Red chillies 6,
  18. coriander seeds 2 teaspoon
  19. cumin seeds 1 teaspoon
  20. shahi jeera 1 teaspoon
  21. star anise 2
  22. lichen 3
  23. cloves 5-6
  24. peppercorn 8-10
  25. methi seeds 1 teaspoon
  26. cardamom 4
  27. cinnamon 1 inch
  28. kasuri methi 1 teaspoon
  29. coriander leaves 1/2 cup
  30. green chillies 3

Instructions

  1. Wash toor dal, moong dal and masoor dal
  2. Heat 1 tablespoon ghee in cooker
  3. Add dal and roast
  4. Add chopped pumpkin, potato, brinjal and tomato
  5. Add turmeric and mix well
  6. Close lid of cooker and cook for 3-4 whistles or till dal is done soft
  7. In another cooker, heat 1 tablespoon ghee, add bay leaves, finely cut onions and saute till onions are soft
  8. Add ginger and garlic paste and saute well
  9. Add washed mutton, water and salt and mix
  10. Pressure cook meat for 4-5 whistles
  11. While meat and dal is cooking, roast whole masala on tawa.
  12. In grinder, add coriander leaves,green chilles and kasuri methi
  13. Add roasted garam masala with red chillies in grinder
  14. Grind this all to fine paste. Use water while grinding
  15. Now open both pressure cookers once cooled. Mash dal with vegetables with hand masher/ whisker
  16. Heat a vessel and add mashed dal
  17. Add ground masala paste and jaggery and tamarind
  18. Mix well amd let it boil
  19. Add cooked meat
  20. Add salt, mix well and let it have a final boil. Remeber we have already added salt in meat, so add salt for dal only.
  21. Serve with parsee brown rice or simple plain rice
