Ingredients Serving: 10

  1. 4 large Onion
  2. 1and 1/2 cup Rice
  3. 2 tbsp tomato paste
  4. 1 tsp black pepper
  5. 1/2 tsp Cinnamon powder
  6. 1 tsp Coriander powder
  7. 1/2 tsp turmeric powder
  8. Salt according to taste
  9. 1/4 tsp mustard seeds
  10. 1 tbsp lemon juice
  11. 3 tbsp oil
  12. 2 tbsp Butter
  13. 1 tbsp Vinegar
  14. 1tbsp Sugar
  15. few chopped fresh Mint leaves for garnish

Instructions

  1. Take a bowl fill with enough water to soak rice. Soak rice for 20 minutes.
  2. Meanwhile Cut off the top and bottom of each onion. Make a cut down one side of each of the onions as shown in pic.
  3. This helps the onion layers properly cook and make it easier to peel.
  4. Take a pot ,fill with enough water to cover onions. Boil it on medium flame for 15 minutes.
  5. after that remove boiled onion from the boiling water. Let cool and separate out the layers.
  6. Now drain the rice. In a large mixing bowl, add the drained rice,tomato paste, all spices mention in ingredients and Mix well.
  7. Take one layer of onion and place 1 tablespoon of the filling, wrap onion around filling.
  8. In a large pan heat oil on medium flame. Now place the onions and let cook for 5 minutes until the bottoms have browned slightly.
  9. now add butter ,vinegar and sugar. Cover the pan and cook for 10 minutes . During cooking rotate onions and cook again for 10 minutes or until the rice are fully cooked.
  10. At serving time garnish with fresh mint leaves and lemon.
