ABOUT Healthy and Spicy Indian Cookies RECIPE

This recipe has been adapted from Tarla Dalal . These cookies are easy to make and healthy as they are baked in the oven. Let's make something healthy this Diwali!

Ingredients Serving: 4

  1. 1/4 cup bajri flour
  2. 1/4 cup jowar flour
  3. 1/4 cup oatmeal (roast regular oats and blend it)
  4. 1/3 cup wheat flour + extra
  5. 2 thai green chilies finely chopped
  6. 1/2 inch ginger finely grated
  7. 2 tbsp yogurt
  8. 1 cup palak finely chopped
  9. 1/2 cup kassori methi
  10. Cooking oil spray
  11. Salt to taste

Instructions

  1. Add a pinch of salt to the chopped palak and leave it in a colander. The salt will drain out the excess water. (We will use this water to make the dough as it is full of nutrition.)
  2. Meanwhile make a paste of the ginger and chilies using a coffee grinder or mortar and pestle.
  3. Take the dry ingredients - bajri flour, jowar flour, wheat flour, oatmeal in a mixing bowl. Add the green chili-ginger paste, palak, kasoori methi and mix it well.
  4. Now add the water removed from the palak slowly and make a dough. If the dough is still not firm add in the yogurt.
  5. The dough should be firm and not sticky. (You should be able to roll it to form small puris.)
  6. Make small balls with the dough and roll out puris the size of your palm, make sure all the puris are of same size so that they bake equally. Use a fork to punch holes in your puri.
  7. Place a foil or parchment paper on a baking sheet and spray it with cooking oil. Place your cookies on it and spray the cooking oil on the top side of the puris.
  8. Bake for 15-20 minutes until the puris have a nice golden brown colour. (The baking time depends on your oven, so watch out for the same.)
  9. Enjoy your cookies with some spicy masala chai.

it has no oil or butter in the dough! won't the bite be too hard??
