ABOUT Phirni/Rice pudding RECIPE

Phirni is a delicious punjabi style milk & rice based creamy dessert.It has a thick creamy texture & is traditionally served in the clay container.

Ingredients Serving: 2

  1. Milk- 2cups
  2. Rice- 1/4 cup
  3. Sugar- According to your taste
  4. Almonds- 5-6 (blanched)
  5. Green cardamom powder- 1/4tablespoon
  6. Saffron strands- 3-4
  7. Orange food colour- 1/4tablespoon (optional)
  8. Ghee- 2 tablespoon
  9. Salt- 1/4 tablespoon

Instructions

  1. 1- Rinse rice in running water & soak in water for half hour.
  2. 2- Drain excess water & transfer rice to a small mixi jar & grind it by adding 2-3 tablespoons ofwater.
  3. 3- In a heavy based pan add ghee once the ghee strts melting add grinded rice & all the other ingredients.
  4. 4-Reduce flame to low & cook with continuos stirring untill the mixture turns creamy & slightly thick it take around 12-15 minutes.
  5. 5- Once it is done turn off the flame & transfer it to a bowl or a clay container & garnish it with almonds & saffron starnds & let it cool at room temparature.
  6. 6- Than keep it in refrigirator for 1-2 hours & tak them from refrigirator just before serving.
