Ingredients to make Bhapa Sandesh/Steamed Sandesh/Ice Cream Sandesh

  • Cow Milk 0.75 litre
  • Curd 1/3 cup
  • Green Cardamom powder 2 teaspoon
  • Rose water 1 teaspoon
  • Sugar as per your taste
  • Ghee for greasing 1/2 teaspoon
  • For garnishing
  • Chopped cashew nut 4-5
  • Saffron strands 1/2 teaspoon

How to make Bhapa Sandesh/Steamed Sandesh/Ice Cream Sandesh

  1. First we have to make chenna.For this take the milk in a heavy bottomed vessel in medium heat.
  2. Beat the curd.keep it aside.
  3. When bubbles comes into milk add beaten curd slowly.
  4. Within few minutes you can see milk starts curdling properly and then switch off the flame.
  5. when it curdle completely, strain the whey using a muslin cloth.Don't squeeze the cloth too much because we don't need very hard chenna like paneer.We need soft chenna.
  6. Take chenna in a mixing bowl and mash it very well using your hand.
  7. Add all other ingredients with chenna and mix it very well.Make a soft dough using your hand.
  8. Grease your metal tin with ghee where you can steam the chenna.
  9. pour the chenna dough into it.
  10. Cover with aluminum foil.
  11. Keep it into the Steamer and steam it for 25 minutes.
  12. Let it cool to room temperature and then keep it to freeze for 2 hour.
  13. Demould it and and cut it as per your shape.
  14. Gernish the sandesh.Here I have gernished with chopped cashew nut and few saffron strands.Serve it cool.

My Tip:

Don't squeeze the chenna too much. If you curdle milk using curd,you don't need to wash paneer to get rid of sour taste.
