Doodhi/ Lauki / Bottle Gourd Tukde Ka Halwa

Ingredients to make Doodhi/ Lauki / Bottle Gourd Tukde Ka Halwa

  • 1 1/2 kg Bottle gourd/ Lauki/ Doodhi
  • 500 millilitre Milk
  • 200 grams Sugar
  • 50 grams Ghee
  • 1 /2 teaspoon Green cardomom seeds
  • 1/2 cup Blanched chopped pistachios
  • 1 tablespoon Coconut powder
  • 1 tablespoon Cream/ Cream of boiled cooled milk

How to make Doodhi/ Lauki / Bottle Gourd Tukde Ka Halwa

  1. Keep dry ingredients and the milk at room temperature.
  2. Clean, wash the gourd, cut into big chunks and if seeds are hard, remove the pulp with seeds
  3. Heat ghee and splutter cardamom seeds.
  4. Add the cut gourd chunks, roast in ghee for 5 minutes and then add malai and coconut powder.
  5. Now when the bottle gourd is cooked and browned, add the milk.
  6. Cook till the gourd is 95 pcent done and then add sugar.
  7. Cook further as the sugar dissolves.
  8. Garnish with chopped pistachios.
  9. Serve hot.

My Tip:

If the seeds of bottle gourd/ lauki are hard, remove the pulp and use only the hollow pieces. Do not add sugar till the gourd is cooked.
