ABOUT White Phirni (Suji and Sago) RECIPE

Phirni is an Islamic traditional sweet recipe which is served with Naan, idiyappam, Bun, Dosai etc. After Eid some Muslims observe six days of fasting during shawwal and this is called shawwal fasting. After completing these six days of fasting the next day morning some Muslims celebrate like Eid and at that time they prepare this Phirni to celebrate. This Phirni is little different as it is made with sago, suji and nuts.

Ingredients Serving: 8

  1. 600 millilitre milk
  2. 100 grams sugar
  3. 200 millilitre sweetened condensed milk
  4. 25 grams almonds
  5. pistachios for garnishing
  6. 25 gram walnuts
  7. 10 gram raisins
  8. 50 gram sago (javvarisi)
  9. 25 gram suji (rava)
  10. 50 grams cashew nuts ( for grinding)
  11. 4 green cardamoms

Instructions

  1. Roast sago in a ghee, add 3 cups of water, 4 cardamoms and cook well. Add milk and cook to reduce.
  2. Grind the cashews, add it to milk and when milk starts boiling add suji little by little and stir well to avoid lumps.
  3. Cook for 5 minutes, add sweetened condensed milk ( milk maid), sugar and mix well.
  4. Finally chop and roast all the nuts in a ghee and add it to phirni.
  5. Serve with Dosa or idiyappam
