Ingredients to make Rice Kesar Kheer

  • full cream milk-4 litre
  • kheer rice- 250 grams
  • green cardamom-7-8
  • saffron-1 pinch
  • sugar-300grams
  • dry fruits for garnish

How to make Rice Kesar Kheer

  1. Soak the dry fruits in lukewarm water and after 5 minutes chop it well.
  2. Soak saffron in hot milk ( 2 tablespoon )
  3. Boil the milk in a large thick bottopmed pan and when it starts boiling, add washed and soaked rice in it, mix well. Keep on mixing for 5 minutes to avoid sticking of milk to the vessel.
  4. Continue cooking on medium flame till the rice is completely soft.
  5. Add sugar (as per your requirements), green cardamom powder and dry fruits.
  6. Continue mixing and add the saffron milk ( it will change the colour and taste of kheer)
  7. Now switch off the flame and cool it.
  8. Dip the earthen pot in water for soaking.
  9. Fill the pot with kheer and keep it in fridge. Enjoy it chilled.
