ABOUT Chhanar Dalna (Chenna Kofta Curry) RECIPE

Authentic bengali dish cooked with chenna often enjoyed during lunch time with a plate of steamed rice (No onion and garlic).

Ingredients Serving: 2

  1. 1. Milk 1 litre
  2. 2. Potato 4
  3. 3. Lemon 1
  4. 4. Clove 1
  5. 5. Cardamom 1
  6. 6. Cinamon stick 1/2"
  7. 7. Ginger 1/2"
  8. 8. Tomato 1 big
  9. 9. Turmeric, cumin, red chilli powder 1 teaspoon each
  10. 10. Mustard oil 2 teaspoon
  11. 11. Flour 1 tablespoon
  12. 12. Ghee 1 teaspoon
  13. 13. Cumin seeds 1teaspoon
  14. 14. Salt and sugar to taste

Instructions

  1. Boil the milk, add juice of a lemon and stir with a spoon. Milk will start to curdle into chenna/cottage cheese/paneer within half a minute. Totally strain the water and rest it for 5 minutes.
  2. Cut potatoes into cubes.
  3. Puree a tomato.
  4. Make a paste of the ginger.
  5. In a bowl take the chenna and mix it with a pinch of each- turmeric, red chilli powder and salt .
  6. Take a portion of chenna and press in between hands to give a flat round shape. Like wise make all the dumplings.
  7. In a pan heat 1 teaspoon oil and fry the dumplings each side till golden brown. Keep aside.
  8. Add the remaining oil and fry the potatoes for 2 to 3 minutes. Add cumin seeds, clove, cinamon and cardamom. When the cumin seeds changes its color, lower the flame and add the turmeric powder, red chilli powder, cumin powder, salt, sugar and ginger paste. Stir for 2 to 3 minutes.
  9. Add the tomato puree and saute till the oil starts to separate. Now add 1 cup of hot water and cover, cook till the potatoes are soft. Add the chenna fritters and ghee. Switch off the flame and enjoy it with hot steamed rice.
