Onion Egg Curry

Ingredients to make Onion Egg Curry

  • Eggs 3
  • Oil 3 tablespoons
  • Onions medium size 4
  • Green chillies 4
  • Turmeric powder a pinch
  • Salt to taste
  • Red chilly powder 1 tablespoon
  • Coriander powder 1/2 tablespoon
  • Coriander leaves

How to make Onion Egg Curry

  1. Boil eggs for 12 to 15 minutes, unshell and cut them horizontally into 3 to 4 pieces each and keep them aside.
  2. Cut the onions into thin slices and slit the green chillies from the middle.
  3. In a pan heat the oil, add slit green chillies, onions and fry them till the onions become golden brown on low flame.
  4. Add salt, turmeric, red chilli powder and coriander powder.
  5. Now add the slices of boiled egg and let them fry for 5 to 7 mins without mixing the curry.
  6. Switch off the flame and add coriander leaves and serve hot with rice or chappati.
My Tip: One can add the whole boiled egg without slicing them.
