ABOUT Dudh Puli RECIPE

This is a famous recipe from Bengal and prepared on the occasion of Poush Sankranti (Makar Sankranti). Sweet stuffed rice flour dumplings are cooked in milk to prepare Dudh Puli.

Ingredients Serving: 4

  1. Chenna (Homemade Cottage Cheese) - 200 grams
  2. Date Palm Jaggery - 2 cups
  3. Rice Flour - 250 grams
  4. Salt - 1/2 teaspoon
  5. Hot Water - as required to knead the dough
  6. Milk - 1.250 lit
  7. Sugar - 3 to 4 tablespoon

Instructions

  1. Take chenna and 1/2 cup jaggery together in a vessel and knead properly for 5 minutes.
  2. Now heat this on gas flame and stir continuously for 5 minutes.
  3. Mixture will leave water, when 90% of water dries up, switch off gas and allow it to cool. Stuffing is ready.
  4. Mix rice flour and salt together. Now add hot water as required to make a soft and smooth dough.
  5. After kneading the dough cover it with a damp cloth.
  6. Now take marble size dough, press in the middle of it and make a pocket using your fingers.
  7. Fill it with the chenna stuffing, prepared earlier.
  8. Fold it like a half moon.
  9. Similarly, follow the procedure for the remaining dough.
  10. Now heat the milk and reduce it to almost half the quantity.
  11. Add the dumplings and boil it for 10 minutes.
  12. Next add date palm jaggery, sugar and a pinch of salt.
  13. Boil it for another 5 to 7 minutes.
  14. Serve it hot and next day you can serve cold too.
