Carrot Payasam / Gaajar Kheer

Ingredients to make Carrot Payasam / Gaajar Kheer

  • 2 -3 medium sized carrots peeled
  • 1/4 cup sugar
  • 10-12 cashewnuts
  • 2 tablespoon fresh grated coconut
  • 400 ml milk / 4 cups milk
  • pitachios chopped for garnish

How to make Carrot Payasam / Gaajar Kheer

  1. Cut the carrots lengthwise and pressure cook with one cup milk and cashews. Let the carrots cool after pressure cooking.
  2. Add fresh grated coconut to a blender.
  3. Once the carrots are cooled, add the sugar and carrots also to the blender.
  4. Blend into a smooth paste. Add some milk if needed while blending.
  5. Transfer the contents to a wide thick bottomed vessel, add in the remaining milk and simmer for about 3-5 minutes until the mild raw flavor of the carrot is lost. Adjust sugar if needed at this stage.
  6. Lastly add one teaspoon ghee(optional) and garnish with chopped pistachios.Serve warm
