Vanilla Cupcakes

Ingredients to make Vanilla Cupcakes

  • flour 1.25 cups
  • eggs 3
  • Vegetable oil 1/2 cup
  • Castor sugar 1 cup + 2 tablespoons
  • Milk 3/4 cup
  • Vanilla Essence 1 tablespoon
  • Baking Powder 2 teaspoons

How to make Vanilla Cupcakes

  1. Mix the oil and milk in a saucepan. Place the pan over a low flame until the milk comes to a boil. Keep aside to cool.
  2. Beat the eggs and the vanilla essence until they are creamy and thick.
  3. Slowly add the castor sugar while beating the mixture.
  4. Sift the flour and baking powder and mix into the warm oil and milk mixture.
  5. Combine the oil, milk, flour, baking powder mixture with the egg mixture and blend to a smooth paste.
  6. Pour into lined cupcake tins. Sprinkle walnuts (optional).
  7. Bake in a preheated oven at 180°C for 15-25 minutes depending on the size of cupcake tins. Remove from oven when an inserted toothpick comes out clean.

My Tip:

I love substituting walnuts for chocolate chips or cranberries in this recipe! It is a great basic recipe with which you can really experiment!
