ABOUT Santula RECIPE

A typical odisha preparation which needs very less oil and is loaded with vegetables. It is light for stomach and ideal for weight loss diet.

Ingredients Serving: 4

  1. Potato 1
  2. Brinjal 2
  3. Small piece of yellow pumpkin
  4. Half raw banana
  5. Drumsticks 3
  6. Half cup cauliflower
  7. FOR TEMPERING
  8. Onion 1
  9. Garlic 4 cloves
  10. Red chili dry 3
  11. 1 tablespoon urad dal
  12. Curry patta a twig
  13. Green chili 2
  14. Jeera
  15. Mustard small tamato
  16. Salt

Instructions

  1. Wash and cut the vegetables and cut potato and brinjal lengthwise. Chop the pumpkin and banana into cubes.
  2. Boil about one and half cup water and add all vegetables except drumstick. (If using).
  3. After 5 minute add drumstick.
  4. Add salt as per taste. Generally tumeric is not added but if you want add a pinch or two.
  5. Keep the flame medium.
  6. Cook till the vegetables are almost tender and be careful not to overcook.
  7. Retain a little gravy do not let all the stock dry.
  8. Now heat the kadhai and add oil.
  9. When oil is hot add jeera, mustard, when they splutter add dry red chili and urad dal.
  10. Add crushed garlic and fry till they change colour. Do not burn else they will make the curry bitter. Add green chili and curry patta. Now add onion add fry till they turn light brown.
  11. If you like add one small tamato chopped and fry a little till they are soft. Mix everything well and immediately add the boiled vegetables along with the juice. Check for seasonings. Mix and switch off the flame after 2 minutes.
  12. Serve with simple roti or parantha. It tastes good with hot steamed rice and pickle.
