ABOUT Daulat Ki Magical Chaat RECIPE

A super famous dessert from Old Delhi.

Ingredients Serving: 4

  1. 2 litre full cream raw milk
  2. 2 and 1/4 cups amul cream ( you can use any cream)
  3. 1 tablespoon cream of tartar
  4. saffron strands few
  5. 1 cup Icing sugar
  6. 1 tablespoon rosewater
  7. 1 tablespoon khoya (solidified milk)
  8. 1 tablespoon crushed chikki
  9. 2 tablespoon chopped pistachios
  10. rose petals (optional) for decoration
  11. silver leaf (optional) for decoration

Instructions

  1. Mix milk, cream, saffron strands and cream of tartar in a big bowl and refrigerate it overnight.
  2. Add rose water and 4 spoons of icing sugar and mix it using hand blender at medium speed.
  3. Foam will be created by blending, collect it and keep it aside on a tilted plate so that remaining milk slips away, take that milk add back in the milk mixture and blend it again.
  4. Sprinkle rest of the icing sugar over the foam.
  5. Serve this foam in bowls and garnish it with chopped pistachios, crushed chikki, rose petals and silver leaf. Since it is called Daulat ki Chaat, you can use fake currency printouts to decorate it. It is fun.
