Roast Milk Cake / Paalu Sakku

Ingredients to make Roast Milk Cake / Paalu Sakku

  • Rice - 1 glass
  • Milk - 3 1/2 glass
  • Sugar 1 1/2 glass
  • Ghee - 1 glass

How to make Roast Milk Cake / Paalu Sakku

  1. Soak a glass of rice for 5 to 6 hours or overnight.
  2. Wash and grind with least amount of milk to a smooth paste(milk to be used from the reserved milk).
  3. Add this paste to the reserved milk and mix.
  4. Add the sugar.
  5. Take a deep bottom pan and add this mixture to it.
  6. Keep on slow fire and keep stirring in between.
  7. Soon the mixture will turn into a lumpy paste.
  8. Continue cooking and keep stirring continuously or else the batter will stick to the bottom of the pan. Can switch from low to medium heat but be very alert.
  9. Now it would turn into a more sticky dough. Absolutely good, no problem at all.
  10. Continue cooking and check with wet hands if dough sticks to the fingers. If yes, then cook further.
  11. When this test comes out successful then the dough is cooked, like in the picture.
  12. Now add the ghee, mix and cook, further on low fire.
  13. Cover and cook.
  14. After around 45 minutes open the lid. The spongy dough is ready.
  15. Now time for the next step. Transfer the spongy dough to another round pan. This step is to roast the cake dough from outside.
  16. The above picture shows how I'm using a flat steel plate to flatten the dough evenly.

  18. Next cover and cook for around 30 minutes for a good roast on the bottom side.
  19. Now open the lid and flip the cake carefully to the other side by keeping a flat plate on top of the pan and inversing it.
  20. Put it back in the pan.
  21. Now roast on the other side for another 20 to 25 minutes.
  22. Here is the other side.
  23. So all done, transfer to a plate where you can easily cut with a sharp knife.
  24. Can cut triangles or small squares.
My Tip: A little pre preparation and patience will help in getting an awesome outcome.
