ABOUT Roast Milk Cake / Paalu Sakku RECIPE

Here is a traditional Andhra sweet I've learnt from my mother in law. This is a real milk treasure. In this recipe milk is used in its purest form accompanied with rice flour paste. No added flavors other than sugar to sweeten it up without which no sweet would be considered sweet. A slow lengthy process of cooking makes it a little strenuous other than which there is nothing difficult. It needs our strength, of patience and power to make which is present in every woman. So no worries. Presenting the recipe in a detailed way with lots of pictures for ease of understanding.

Ingredients Serving: 6

  1. Rice - 1 glass
  2. Milk - 3 1/2 glass
  3. Sugar 1 1/2 glass
  4. Ghee - 1 glass

Instructions

  1. Soak a glass of rice for 5 to 6 hours or overnight. Wash and grind with least amount of milk to a smooth paste(milk to be used from the reserved milk). Add this paste to the reserved milk
  2. Add sugar. Take a deep bottom pan and add this mixture to it. Keep on slow fire and keep stirring in between. Soon the mixture will turn into a lumpy paste.
  3. Continue cooking and keep stirring continuously. Now it would turn into a more sticky dough. Continue cooking and check with wet hands if dough sticks to the fingers. If yes, then cook further.
  4. When this test comes out successful then the dough is cooked, like in the picture. Now add the ghee, mix and cook, further on low fire. Cover and cook. After around 45 minutes open the lid. The spongy dough is ready.
  5. Now time for the next step. Transfer the spongy dough to another round pan. This step is to roast the cake dough from outside.
  6. The above picture shows how I'm using a flat steel plate to flatten the dough evenly. Next cover and cook for around 30 minutes for a good roast on the bottom side.
  7. Now open the lid and flip the cake carefully to the other side. Put it back in the pan. Now roast on the other side for another 20 to 25 minutes.
  8. So all done, transfer to a plate where you can easily cut with a sharp knife. Can cut triangles or small squares.
