Mushroom Masala

Ingredients to make Mushroom Masala

  • 1 packet mushroom
  • For dicing and light toss:
  • 1/2 onion
  • 1/2 capsicum
  • 1 tomato deseeded
  • For paste 1:
  • 1 large onion
  • For paste 2:
  • 2 tomatoes
  • For paste 3:
  • 1/2 inch cinnamon
  • 4 cloves
  • 10 garlic
  • 1/2 inch ginger
  • handful coriander leaves
  • 1 green chilli
  • little coconut
  • For paste 4:
  • cashew as per taste
  • 1 teaspoon poppy seeds
  • 4 - 5 teaspoon curds
  • Other Ingredients:
  • oil
  • 3/4 teaspoon red chilli powder
  • 3/4 teaspoon dhanya powder
  • 1/2 teaspoon garam masala
  • turmeric
  • salt
  • 1/2 teaspoon jeera powder
  • kasuri methi

How to make Mushroom Masala

  1. Paste 1: In a pan add 1 teaspoon oil. Add in chopped onion and fry. Cool it. Grind it.
  2. Paste 2: Make tomato puree.
  3. Paste 3: Put all the ingredients in a jar and make a fine paste.
  4. Paste 4: Soak cashew and poppy seeds in water for 15 minutes. Then add this in jar, add curd and make a fine paste.
  5. Dicing and toss: Dice onion and capsicum. In a pan add 2 tablespoon oil. Now add diced onion, fry for a minute and remove it into a bowl. To the same pan add capsicum, fry for a minute and remove it into a bowl. (To give a crunch element to the dish). Deseed tomato, dice it and fry for 10 seconds and remove (over frying will make it soggy).
  6. Wash the mushroom cleanly. Now chop it as required (I chopped 1 mushroom into 4 piece). Add this to a pan. Mushroom leaves the water. Fry until all the water is evaporated.
  7. After all the preparations, In a pan heat oil (approx 5 tablespoon or as per taste). Add in Paste 1. Fry until the pungent smell of onion is gone and onion paste is bit golden brown.
  8. Now add Paste 2. Fry until tomato puree is cooked half way.
  9. Add in red chilli powder, dhanya powder, turmeric, salt, garam masala, jeera powder. Fry until masala is cooked.
  10. Now add Paste 3. Give a nice mix. Add water if necessary. Cook it for 5 minutes.
  11. Now add Paste 4. Mix well. Add water to reach gravy consistency. Check for seasoning. Adjust seasoning if necessary.
  12. Add in kasuri methi and mix.
  13. Now add in mushroom, mix well. Add in diced and tossed onion, capsicum and tomato. Very gently mix it up.
  14. Serve it with puri or roti.
My Tip: Clean mushroom well. You can add fresh cream at end. For frying onion paste oil can be substituted with butter.
