Zucchini-Vindi masala fry

Ingredients to make Zucchini-Vindi masala fry

  • Ladies finger- 200 gms
  • Pumpkin flower (Zucchini) - 100 gms
  • Onion - 1 chopped
  • Ginger paste - 1 teaspoon
  • garlic paste - 1 teaspoon
  • Mustard seed - 1 teaspoon
  • 1 dry chili
  • oil as required
  • Salt as per taste
  • turmeric powder 1 teaspoon
  • Garam masala 1 teaspoon
  • Cumin powder 1 teaspoon
  • Coriander leaves to garnish
  • lemon 1

How to make Zucchini-Vindi masala fry

  1. Wash the ladies finger and pumpkin flower neatly in adequate water. Let them dry in a plate.
  2. Chop the ladies fingers and keep aside. Similarly chop the pumpkin flower and throw out the yellow smooth central stamen of the pumpkin blossom.
  3. Chop down the onion into very small size.
  4. Make 1 tea spoon paste of a ginger and garlic.
  5. Now heat a pan with oil, after a while add mustard seed with a dry chili, then add the chopped onion, sprinkle salt according to taste then add 1 teaspoon turmeric and cumin powder; fry it for awhile till it turns golden.
  6. Add the paste of ginger and garlic. After 2-3 minutes add ladies finger and fry for 5-7 minutes till it become non sticky, cover it for a while till it become softener. Add spices that you like as per your taste.
  7. Add chopped zucchini to it, let it fry till all the moisture goes out from it and it turns brownish.
  8. Garnish the spicy dish with coriander leaves and sprinkle lemon on it. Zucchini- Vindi masala fry is ready to served now with rice or roti.
My Tip: Always fry on low heat and sense the delicious smell.

Nice dish dear! But i'm confused if you have added only pumpkin flowers or zucchini as well? They are different ingredients right?
