ABOUT Nalen Gurer Payes | Bengali Rice Pudding with Date Palm Jaggery RECIPE

Nalen gurer payes is bengali style rice pudding flavored with date palm jaggery. Aromatic short grain rice name govindabhog, milk and date palm jaggery, these only three ingredients are making a magic on taste. In winter season nalen gurer payes is a regular affair of every house in bengal as the best date palm jaggery produce in winter.

Ingredients Serving: 4

  1. Milk - 2 litre
  2. Aromatic short grain rice (govindabhog or basmati tukra or ambemohar) - 75 grams
  3. Date palm jaggery- 1/2 cup or adjust according to your taste

Instructions

  1. Soak rice with water for 30 minutes - 40 minutes.
  2. Heat a saucepan. Add milk and stir constantly till bubbling.
  3. Once it's start to bubble add rice.
  4. Now stir constantly till milk bubbles again.
  5. Stir milk on low to medium heat for 30 - 40 minutes or till the rice is cooked well and milk has reduced up to 40 %.
  6. When rice is cooked properly then add jaggery. (Adjust according to your sweet taste )
  7. Stir it to dissolve jaggery and mix well with milk.
  8. Now white milk and rice pudding get nice reddish golden colour.
  9. Turn off gas when you will get a nice semi thick consistency of rice pudding.
  10. Serve Nalen gurer payes when little chilled.
