Thai Vegetable Rice with Cheese Sauce

ABOUT Thai Vegetable Rice with Cheese Sauce RECIPE

This Thai recipe is easy to cook and a tasty treat for you. This recipe uses coconut milk which gives a creamy touch.

Ingredients Serving: 4

  1. Basmati rice - 1.5 cups
  2. Coconut milk- 2 cups
  3. Mushrooms, chopped- 1/4 cup
  4. Capsicum, cut into long pieces- 1 medium
  5. Onion, finely chopped- 1 medium
  6. Garlic, chopped- 3 cloves
  7. Green chilies, chopped- 2
  8. Cardamom- 1
  9. Bay leaf- 1
  10. Cashew nuts, broken- 2 tablespoons
  11. Turmeric- 1/4 teaspoon
  12. Salt- as per taste
  13. Oil- 2 tablespoons
  14. For cheese sauce- 1 cube cheese
  15. Green chilly, chopped- 1
  16. Garlic, chopped- 2 cloves
  17. Milk- 4-5 tablespoons

Instructions

  1. Wash the rice and soak it for 1 hour.
  2. Wash mushrooms, cut them into small pieces and boil them for 2-3 minutes.
  3. In a vessel, heat oil, add bay leaf and cardamom.
  4. To this add chopped garlic, chopped onion and broken pieces of cashew nuts.
  5. Mix the above mixture for a minute. To this add boiled and chopped mushrooms, green chilies and capsicum.
  6. Stir-fry these vegetables for 2-3 minutes.
  7. To the above vegetable mixture add coconut milk, salt and turmeric.
  8. When the milk boils, add rice to it. Stir well and add a cup of water to it.
  9. Cook this rice on a high flame till the quantity of milk reduces.
  10. Once the quantity has reduced, cover it with a lid and cook it on slow flame for 4-5 minutes. Serve hot.
  11. For cheese sauce recipe- Grate 1 cube cheese in a large bowl.
  12. Add chopped green chilies and chopped garlic on it.
  13. Heat water in a pan and place the above bowl in water. If you cook the cheese on direct heat it will get burned.
  14. When the cheese starts melting add 4-5 tablespoons milk to it. Mix well.
  15. Enjoy your Thai vegetable rice with cheese sauce.
