Cauliflower Kheer

Ingredients to make Cauliflower Kheer

  • 1 full cup boiled mashed cauliflower(You can blend in mixer).
  • 500 millilitre milk
  • 3/4 cup sugar
  • 1/2 cup grated coconut
  • dry fruits(what ever you like)Kaju,kismis,badam etc
  • 2-3 teaspoon ghee
  • 1 teaspoon rice flour(optional)
  • 1/2 teaspoon cardamom powder(optional as we are using lemon essence)
  • 1/2 teaspoon lemon essence
  • few rose petals
  • Some coconut pieces and a twig of cauliflower, some dry fruits for decoration.

How to make Cauliflower Kheer

  1. Heat a thick bottom pan, add ghee.
  2. Add mashed cauliflower. Fry well, till the smell of cauliflower is taken by ghees flavor.
  3. Add sugar, stir well.
  4. When sugar is dissolved completely, add milk, let it come to boil.
  5. Then add dry fruits and coconut paste, stir occasionally.
  6. After 5-6 minutes add rice flour which is soaked in little milk.
  7. Stir it, then add cardamom powder.
  8. When the consistency is semi solid add lemon essence.
  9. Switch off gas, mix well then pour it in a dish.
  10. Decorate with dry fruits and rose petals.
  11. Serve chilled.
