About Blueberry Basundi

I like fusion of the flavors and often try something new. This one is from one of my collections. Basundi is a famous Gujarati sweet, where slowly thickened milk, cardamom and nuts come together to make this delicious Indian dessert. I have paired it with fresh home made Blueberry compote. The verdict is "Its YUM"

Blueberry Basundi

Ingredients to make Blueberry Basundi

  • Full cream milk - 1 ltr
  • Sugar - 1/4 cup
  • Cardamom - 1 tsp (crushed)
  • Almonds - 10 (chopped)
  • Saffron - 8 strands
  • Blueberry - 1 cup
  • Sugar - 1/4 cup
  • Lemon - 2-3 drops

How to make Blueberry Basundi

  1. Heat milk in a heavy bottom pan.
  2. Bring it to a boil.
  3. Keep stirring on simmer until it reduces to half.
  4. Add 1/4 cup sugar and cardamom powder.
  5. Add half of saffron.
  6. Add 3/4 of the almonds.
  7. Keep stirring until it cream in color and thick.
  8. Take it off the flame.
  9. Now prepare the compote.
  10. Take Blueberry and sugar in a pan.
  11. Cook it on sim until blueberry is soft.
  12. Stir and cook until sugar is dissolved.
  13. Let the berries leave their juice.
  14. Add lemon drops.
  15. Cook for a minute.
  16. Pour Basundi in a jar / serving bowl.
  17. Top it with fresh Blueberry compote.
  18. Garnish with remaining almonds and saffron.
  19. Serve it.
My Tip: You can even add a brownie and make a mind blowing dessert.
