ABOUT Khajur Rabri with Mahua Gulgule RECIPE

In old days when a new bride came in our house, then she was suppose to make gulgule. My dadi maa prepared excellent gulgule. I am giving a twist of my dadi maa gulgule recipe in to Mahua Gulgule with Khajur Rabri.

Ingredients Serving: 4

  1. Wheat flower 100 grams
  2. Mahua (butter tree) paste 100 grams
  3. Sesame seeds 1 teaspoon
  4. Milk 1 litre
  5. Khajur (Date) paste 80 grams
  6. Saffron 6-7 strings
  7. Chopped pistachios 3 teaspoon
  8. Honey syrup 1/2 bowl
  9. Cardamom powder 1/2 teaspoon
  10. Rose water 4-5 drops
  11. Rose petals for garnishing
  12. Silver leaf for garnishing

Instructions

  1. Take a deep pan add milk and boil it.
  2. Add cardamom powder and cook on slow flame.
  3. When it becomes little thick then add khajur paste, stir it continuously to avoid lumps.
  4. Add saffron, rose water, chopped pistachios and cool it.
  5. Take a bowl, add wheat flower, mahua paste, sesame seeds and pinch of baking soda. Mix it properly, add jaggery syrup if required, form a batter of dropping consistency.
  6. Heat oil and add equivalent to a tablespoon of the batter over high heat.
  7. Lower the heat and let the gulgula cook over medium heat.
  8. Increase the heat and cook it.
  9. Lower the heat and cook turning once or twice till brown.
  10. Remove from oil and soak in honey syrup for 5-10 minutes.
  11. Serve soft and juicy mahua gulgule with cool khajoor rabri.
  12. Garnish with chopped pistachios and silver leaf.
