Okra or ladies finger cooked in a tomato and mustard paste gravy.

Ingredients Serving: 4

  1. Okra or ladies finger- 250 gms
  2. Tomato (sour variety)- 01
  3. Mustard seeds- 03 tsp
  4. Garlic- 3-4 flakes
  5. Green chillies- 2-3
  6. Mustard oil- 2 tbsp
  7. Curry leaves- 5-6
  8. Pancha phutana/ Panch phoran- 1 tsp
  9. Whisked yogurt- 2-3 tbsp
  10. Hot water- 1 Cup
  11. Chopped Coriander- 01 tbsp
  12. Turmeric powder- 1 tsp
  13. Salt to taste

Instructions

  1. Make a paste of the mustard seeds, garlic and green chillies in a mixer, add the tomato when the paste is half made and grind it again.Keep it aside.
  2. Wash and dry the okra,cut them into 1 inch pieces.
  3. Heat 1 tbsp of the mustard oil till smoking point, lessen the heat,sauté the okra till half cooked and keep it aside.
  4. In the same wok take the rest of the oil,Heat till smoking point,lessen heat ,add the pancha phutana and the curry leaves,let it splutter.
  5. Add the ground paste and fry for a minute,add the okras ,salt, turmeric and the hot water,and cook till the okras are fully cooked.
  6. Lastly add the whisked yogurt,give one good boil in low heat ,switch off the heat and garnish with chopped coriander.
