About LUCHIR AAMROPALI OR PURI KI AAM KHEER .....

Indian fried flat bread simmrred in thickened mango kheer ........ Today I am celebrating with traditional and authentic dessert of BENGAL sweet in Luchir Aamropali . Though now days this recipe is getting lost from many Bengali kitchen gradually . It is very delicious and easy to make .

LUCHIR AAMROPALI OR PURI KI AAM KHEER .....

Ingredients to make LUCHIR AAMROPALI OR PURI KI AAM KHEER .....

  • Milk - 1 litter
  • Condensed milk - 1/2 cup
  • Khoya - 100 gm
  • Sugar - 2 tablespoons
  • Mango puree - 1 cup
  • Cardamom powder - 1/2 teaspoon
  • Luchi or Poori - 10 - 12 pieces (it should be light brown crispy and small )
  • For garnished :::;
  • Chopped mango
  • Raisin - 2 tablespoons

How to make LUCHIR AAMROPALI OR PURI KI AAM KHEER .....

  1. Take a heavy bottomed vessel , preferably non - stick , add milk for Kheer or Payesh .
  2. Bring it to boil , when milk will start boiling , simmer the gas , add cardamom powder .
  3. Let it simmer till reduced to half the original quantity of milk , stirring in between .
  4. Once the milk thickens a little bit add the condensed milk and mix well .
  5. Add sugar , khoya stir and simmer till it dissolved .
  6. Add the mango puree and continue stir .
  7. Now add the little luchis or pooris one by one , press slightly with the back of the ladle to dip them into the milk properly , mix carefully . Add all the luchis or pooris in the same way . Simmer for two minutes .
  8. Switch off the flame and cover the pan . Let it be cool for 2 hours . Luchis or Poori would sook a adequate amount of milk .
  9. Garnished with chopped mangoes and raisins ............
My Tip: It is necessary to adjust the quantity of your luchi and poori and milk . If it becomes dry then add some extra thickened milk or mango plup .
