Kurkuri Aaloo Bhindi

Ingredients to make Kurkuri Aaloo Bhindi

  • Potatoes- 3 cut in long (like French fries)
  • Okra/ladies finger/bhindi- 250 gm (cut in three parts)
  • Salt- to taste
  • Coriander powder- 1/2 tsp
  • cumin powder - 1 / 2 tsp
  • garam masala - 1 / 2 tsp
  • Turmeric powder- a pinch
  • red chilly powder - 1 / 2 tsp
  • aamchur powder- 1/2 tsp
  • Corn flour- 2 tbsp
  • Plain flour- 2 tbsp
  • Onion- 1 sliced
  • tomato- 1 finely chopped
  • green chilly- 2 slanted
  • Coriander leaves- for garnishing

How to make Kurkuri Aaloo Bhindi

  1. Marinate with above spices and keep aside okra/bhindi and potatoes separately.
  2. Fry onions and keep aside.
  3. Fry slanted chillies too.
  4. In a karahi mix potatoes, okra/bhindi, fried onions & chillies. And lastly add salt if needed.
  5. Garnish it with coriander leaves.
