ABOUT Gajar Halwa Crepes in Pistachio Basundi RECIPE

My new innovation in gajar ka halva which I have named gajar halwa crepes in pistachio badundi.The innovation in my dish apart from lots of love is that I have rolled the halwa in crepes, served with chilled pistachio basundi.

Ingredients Serving: 10

  1. For gajar halwa :
  2. 1.5 liter milk
  3. 2 kilogram carrot grated
  4. 1/2 cup desi ghee
  5. 1 cup cashew nut and almond chopped
  6. 1 teaspoon cardamom powder
  7. 1 1/2 cup sugar
  8. For pistachio basundi :-
  9. 1 liter milk
  10. 1 cup pistachio powder
  11. 2 tablespoon sugar
  12. For crepes :-
  13. 1/4 cup maida
  14. 1/4 cup cornflour
  15. 1/4 cup milk
  16. 2 tablespoon powder sugar
  17. 1 teaspoon melted butter
  18. 1 pinch of salt

Instructions

  1. First of all we will make gajar ka halawa keep the milk in a heavy bottom vessel to boil.
  2. When milk starts boiling add the grated carrots in the milk and mix well.
  3. Now cook them in medium flame till the milk is totally absorbed.
  4. Then add 1/2 cup of ghee and above mentioned quantity of sugar ( add sugar according to your taste) then roast it for next 5 - 10 minutes. Now switch off the flame.
  5. Now add the chopped dry fruits and cardamom powder and mix well. Keep aside. Gajar ka halwa is ready.
  6. Step 2 for pistachio basundi :- boil the milk till it gets reduced to half quantity.
  7. keep on stirring in between so that it doesn't get stick to the vessel.
  8. When milk reduces to half, then slow down the flame, then add sugar, pista powder in reduced milk and mix well.
  9. Cook it on low flame next for 5 minutes and then put off the gas.
  10. Step 3 for crepes :- mix all the crepe's ingredient with 1/4 cup water so that no lumps are formed.
  11. Heat non stick pan brush with butter, cool the pan, then a spoon of batter into it like a chila.
  12. Cook it on slow heat only one side .
  13. Take it out from from the pan.
  14. Now cut it in rectangular pieces with scissors and add one tablespoon or more gajar ka halwa in the centre and roll it. Garnish it with chopped dry fruits and serve with ready pistachio basundi.
