Ingredients to make doodh biriyani

  • basmati rice 600 gms
  • Chicken 1 kg
  • ghee 50 gms
  • white oil 100 gms
  • Onions sliced 4
  • gg paste 2 tblspn
  • khoya 2 tblspn
  • almon paste 4 tblspn
  • Curd 50 gms
  • Milk 200 ml
  • slited green chillies 5
  • sha morich powder 1 tspn
  • green cardamom 5/6
  • cloves 7/8
  • Cinnamon stick 2
  • nutmeg powder 1/4 tspn
  • jawitri 2
  • Salt
  • sugar
  • lime juice of 1 lime
  • Nuts and raisins
  • Rose petals
  • coriander /mint leavesfor garnishing

How to make doodh biriyani

  1. put the rice in milk for soak for 1 hour
  2. boil water with salt and sugar in a pan
  3. then add in boiled water along with the milk and cook it till 75% will be done,then strain the rice and spread it in a plate
  4. heat ghee in heavy bottom pan,add cardamom,cinnamon, cloves,nutmeg, jawitri stir it to release the aroma
  5. add onions. fry in low flame, make sure it shouldn't be brown..it will only be translucent
  6. now add clean and washed chicken,then gg paste saute with onions so that the juice of onions and gg paste would soaked by the chicken.
  7. now add almond paste ( soaked almond without skin in milk,then blend it) saute it,in this time add salt and green chilly and sha morich powder salt will help to not to stick the paste at bottom
  8. add khoya and stir till it melts. it will give a richness to the dish
  9. add curd and mix it,sprinkle sugar
  10. add nut,dried rose petals,raisins
  11. now add 75% done rics into this pan,even out the top
  12. add lime juice and ghee overr the top and sealed the pan.
  13. now cook in dum for 5 min in high flame,10 min in low flame and 20 min over a tawa
  14. switch off the flame,wait few min.serve with garnishing
My Tip: sugar and rose petals are optional.
