Ingredients to make Khira gaitha (milky rice ball)

  • Soaked Rice 1cup
  • Grated coconuts 1cup
  • Milk 1 1liter
  • Cardamom powder 2tspn
  • Sugar 1cup
  • Salt to taste
  • Raisins for garnishing
  • Bay Leaves 1

How to make Khira gaitha (milky rice ball)

  1. 1.soak rice over night.
  2. 2.mix grated coconuts and rice . make a paste .
  3. 3.Take 1/2cup of rice paste and keep aside.
  4. 4.In a deep pan add equal amount of milk according to rice paste.
  5. 5.Add some sugar , salt and cardomom powder and boil it .
  6. 6.Now add the rice and coconut paste to this milk and cook in slow flame for 10 min to become a fine dough.
  7. 7.wait to cools down the dough in room temperature. Kneed the dough with ghee to make it softer.
  8. 8.make small balls out of this dough. Keep aside.
  9. 8.In between in a pan boil 800ml milk and reduce it to 500 ml by slow cook.
  10. 9.Add sugar , bay leaves and cardomom powder to this milk .
  11. 10.Now add rice balls to this milk carefully and boil it for 10 minutes.
  12. 11.Add stored rice paste into the boiling milk and again boil it for 3to 5 minutes .stire it properly.
  13. 12. Khira Gaintha is ready now.
  14. 13.Garnish with cashewnuts, raisins and cube coconut.serve hot or cold.
My Tip: Can use kesar for different flavour .for easy way you can steam the rice ball in steamer and then add it into the milk.
