Ingredients to make Herb Cottage Cheese / Italian Paneer

  • 1/2 litre milk.
  • 2 tablespoons lemon juice.
  • 2 teaspoon italian herbs.
  • 1 teaspoon red chilli flakes or powder.
  • Freshly chopped coriander leaves. (Optional)
  • Salt to taste.

How to make Herb Cottage Cheese / Italian Paneer

  1. Take a pan, add milk in it keeping 1/2 cup of milk aside.
  2. Bring the milk in pan to boil.
  3. Meanwhile add lemon juice to the milk kept aside.
  4. Immediately you shall see the milk getting coagulated.
  5. Add this mixture to the milk in pan.
  6. Also add the herbs, chilli flakes, salt and coriander leaves.
  7. Stir it well.
  8. Switch off the flame.
  9. You will soon notice that the entire milk is curdled.
  10. Now place the strainer on a vessel and pour the curdled milk over the strainer.
  11. Let all the liquid flow away from the milk.
  12. Transfer the curdled milk portion to a muslin cloth.
  13. And squeeze out the liquid if any.
  14. Transfer it to a bowl or a mold where you want to set the cottage cheese.
  15. After 2 to 3 hours the cottage cheese would be set.
  16. Cut in desired shapes and serve as they are or grill them or serve with ketchup. You can use this as a snack also.
