ABOUT Leek Soup RECIPE

A healthy and tasty soup made with leeks and white sauce.

Ingredients Serving: 4

  1. 450gm Leeks
  2. 600ml Vegetable stock
  3. 300ml Milk
  4. 1/4 cup Refined flour
  5. 2tbsp Butter
  6. Pepper to taste
  7. Salt to taste

Instructions

  1. Wash and trim the leeks, slice thinly. In a pan, heat the stock and cook the leeks till tender.
  2. Press through a sieve to form a puree and return to fire.
  3. In another pan, Heat butter and add flour. Stir well. Gradually add milk to form a white sauce and keep aside.
  4. Add this sauce into the pan with leeks. Season it as per your preference.
  5. Bring it boil, until the consistency becomes a bit thick, then remove from fire.
  6. Serve it hot, with fried croutons.
