Ingredients to make Doodh,Malai,Kofta

  • For Doodh malai,650 ml ful fat milk
  • 1/2 cup Cream
  • 1/4 tsp saffron strings
  • 4-5 tsp powder sugar
  • For kofta,6 piece of bread slice
  • 1/2 cup Milk
  • 2 Egg yolk
  • 1/4 cup maavaa
  • 2 tsp powder sugar
  • 2-3 tsp crushed dry fruits like pistachio,almond,cashew and walnuts
  • Oil for frying

How to make Doodh,Malai,Kofta

  1. In a small bowl take little amount of milk add saffron strings boil it and keep aside it to cool.
  2. Take a deep pan add milk and cream and mix well and keep it on gas to boil,now add saffron milk in this and continue stir and cook it.
  3. In this stage add sugar in it and mix well,when it's quantity 1/3 of original quantity switch of gas and keep aside it to cool,when cool keep it in fridge to enhance it's taste.
  4. For Kofta,In double boiler pan add milk and egg yolk in it and continue mix it when it start to think add maavaa,powder sugar and crushed dry fruits in it and mix well and switch of gas and keep out from boiler and keep it in fridge for 10-15 min to set.
  5. Take bread slice cut the sides of all slice,after 10-15 min keep out from fridge and place this mixture in bread slice and close it and make all like this.
  6. Now heat oil in pan fry one by one this bread and egg kofta in this oil.
  7. serve this hot kofta with chilled Doodh malai for more taste.
  8. Garnish with few saffron strings and some pistachio.
