Rabdi in chocolate coated golgappas and used caramelized sugar.

Ingredients Serving: 4

  1. For rabdi----
  2. milk 2 litre
  3. sugar 250 grams
  4. cardamom powder 1/2 teaspoon
  5. golgappas / pani puri's puri
  6. choco chips 100 grams
  7. sugar 4 tablespoon for caramelization

Instructions

  1. Keep milk for boiling.
  2. Reduce it to 3/4 on medium flame.
  3. Keep on stirring at 5 minutes intervals.
  4. Add sugar.
  5. Add cardamom powder.
  6. Your rabdi is ready.
  7. Cool it completely.
  8. Take choco chips and melt it in double boiler.
  9. Make holes in puris.
  10. Coat puris in melted chocolate.
  11. Keep in fridge for sometime.
  12. Keep a pan on flame.
  13. Add sugar to it.
  14. Keep stirring till sugar melts and comes out in golden color.
  15. Take a parchment paper and make strips with the help of spoon.
  16. Let it cool.
  17. Remove puris from fridge and fill rabdi with help of small spoon.
  18. In serving plate spread little rabdi.
  19. Keep filled puris on that.
  20. Remove caramel from paper and decorate it.
  21. You can use edible silver paper/vark also to decorate.
  22. Serve with love to your guests.
